A christmasy recipe for you guys today! Melt in the mouth lemon shortbread shapes beutifully decorated in a sweet glace icing and lots of colourful sprinkles. These ones are perfect to make with the family, super quick to make and then everyone can get involved with decorating.
You could even switch up the flavours, have some orange ones or maybe even lime ones to! These are also super versatile so why not make them into an easter shortbread, or gift them as a great birthday present!

INGREDIENTS:
190g gf plain flour
125g butter
55g caster sugar
3 Lemons
75g Icing suger (or you could make icing like buttercream or leave them Plain)
sprinkles (optional)
METHOD
Preheat the oven to 150 fan, grease and line a large baking tray with baking paper
Cream together the butter and sugar until smooth
Sieve in the flour and zanthem gum in addition to adding the zest of 2 lemons and the juice of one lemon and mix well
Roll the dough onto a floured work surface until thin (if you want thicker shortbread you can roll it so that it is a little bit thicker) and cut into shapes using pastry cutters, a knife or the rim of a mug. Re roll out the scrapes of pastry until it is all cut out and placed on your large baking tray
Place the shortbread in the oven for 10 minutes or until they begin to turn golden- keep an eye on them as they can burn easily.
Once cooked remove the shortbread from the oven and leave to cool on the tray for ten minutes, and then remove from the tray and leave to cool completely on a flat surface
If your making the glace icing: In a large bowl sieve in your icing sugar and then mix in the juice of the last lemon (If its to thick you could add more lemon juice or some water)
Once your done decorating your shortbread leave them for approximately 15 minutes to allow the icing to set and then enjoy!
